Aubella is inspired by a half-Italian family story: summers in Southern Italy, simple kitchens, big tables, and the kind of food that brings everyone together.
My Nonna Alessandra was the matriarch of the kitchen. I remember hearing her banging around at the crack of dawn to start the pasta sauce, stewed meat and meatballs. It all needed love and time — and my Nonno Mario had to eat at 12 on the dot.
We would gather around the table, squashed together with laughter, love and teamwork. After long lunches came a siesta, pizza in the evening, and a passeggiata through the village to digest the day’s feast.
Among the cheese, salami and prosciutto, there was always aubergine under oil — oily, tangy, herby and garlicky — eaten on fresh bread or tucked into a sandwich at a festa with grilled Italian sausage.
Aubella is our way of sharing that Italian comfort, passed from generation to generation.
